Preparation

  • Gather all your ingredients.
  • In a mixing bowl, combine the cottage cheese and eggs. Whisk until well blended.
  • Add in the oats, baking powder, vanilla extract, and salt. Stir until combined. The mixture should be thicker than traditional pancake batter but still pourable.

Cooking

  • Heat a non-stick skillet over medium heat and grease it lightly with oil or butter.
  • Once hot, pour a ladle of the batter onto the skillet, spreading it out to about 4-5 inches in diameter.
  • Wait until bubbles form on the surface, then flip the pancake and cook for another minute or two until golden brown.

Serving

  • Remove the pancakes from the skillet and keep warm on a plate while you cook the remaining pancakes.
  • Serve with toppings like sliced bananas, fresh berries, maple syrup, or a dollop of yogurt.

Notes

Add a sprinkle of cinnamon to the batter for extra flavor. If you have leftovers, store them in an airtight container for 3-4 days or freeze for up to 2 months.
