Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, mash the ripe bananas until smooth.
  • Stir in the cottage cheese until well combined.
  • Add the eggs, honey or maple syrup, and vanilla extract. Mix well.
  • In a separate bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, and cinnamon.

Cooking

  • Slowly mix the dry ingredients into the wet ingredients.
  • Stir until just combined; be careful not to overmix.
  • Grease a loaf pan or line it with parchment paper.
  • Pour the batter into the prepared pan and smooth out the top.
  • Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted comes out clean.

Serving

  • Let the bread cool in the pan for about 10 minutes.
  • Transfer to a wire rack to cool completely.
