Ingredients

Wet Ingredients

  • 1 can 11 oz can of corn kernels Provides moisture and natural sweetness.
  • 2/3 cup packing liquid Enhances texture; use liquid from the corn can.
  • 1/3 cup buttermilk Adds creaminess and flavor; substitute with plain yogurt if necessary.
  • 3 tablespoons olive oil A heart-healthy fat; can use melted butter for a richer flavor.
  • 3 tablespoons honey Natural sweetener that pairs nicely with corn; can be substituted with maple syrup.

Dry Ingredients

  • 2 3/4 cups bread flour Essential for structure; whole wheat flour can be used for added nutrition.
  • 1 1/4 cups white or yellow cornmeal Gives the bread its signature texture; do not use self-rising.
  • 1/3 cup chopped fresh parsley Adds freshness and color; dried parsley can replace it in a pinch.
  • 1 3/4 tablespoons poultry seasoning Infuses the bread with a savory note; experiment with savory herbs of choice.
  • 3/4 teaspoon garlic powder Elevates flavor.
  • 1 1/2 teaspoons kosher salt Essential for enhancing taste.
  • 1 tablespoon active dry yeast Helps the bread rise; make sure it's fresh for best results.

Instructions

Preparation

  • Ensure all ingredients are at room temperature for optimal mixing.
  • Open the can of corn and drain the packing liquid into a measuring cup. Use all kernels and measure out 2/3 cup of the liquid. Discard the extra liquid.
  • Start by adding corn kernels to the bread machine pan. Follow by pouring in the corn liquid, buttermilk, olive oil, and honey.
  • Next, add the bread flour and cornmeal over the wet ingredients. Sprinkle the chopped parsley, poultry seasoning, garlic powder, and kosher salt on top.
  • Using your finger, dig a shallow well in the flour and add the yeast into this well.

Cooking

  • Place the bread pan back into the machine. Select the 2-pound loaf size and choose your desired darkness setting (Medium is recommended for this recipe).
  • Choose the Basic/White program and press Start.
  • As the machine mixes, keep an eye on the dough's consistency. If needed, gently scrape the sides to ensure all ingredients are incorporated.
  • The complete baking cycle will typically take about 3.5 hours.
  • Once done, carefully remove the bread from the pan and allow it to cool for at least 10 minutes before slicing.

Notes

For added flavor, consider mixing in cheddar cheese or jalapeƱos to the dough before baking. Store leftover bread in an airtight container for up to 3 days, or freeze for longer storage.
