  • 2 cups Cooked Corned Beef, diced Can use leftover roast
  • 2 cups Cooked Potatoes, diced Leftover or freshly boiled
  • 1 medium Onion, diced Adds sweetness and aroma
  • 1 medium Red Bell Pepper, diced Can swap for other bell varieties
  • 2 tablespoons Olive Oil For frying
  • to taste Salt For enhancing flavors
  • to taste Pepper For enhancing flavors
  • 2 large Eggs (optional) To top the hash for added protein

Instructions
 

Preparation

  • Gather all ingredients for smoother cooking.
  • Dice the corned beef, potatoes, onion, and bell pepper into small, evenly sized pieces.
  • Heat a large skillet over medium heat and drizzle with olive oil.

Cooking

  • Add diced onion and red bell pepper to the skillet. Sauté for about 5 minutes until softened and fragrant.
  • Toss in the diced potatoes and corned beef. Spread them in an even layer and let cook undisturbed for 5–7 minutes for crispy edges.
  • Stir occasionally for another 5 minutes until everything is heated through and crispy.

Serving

  • If using eggs, create small wells in the hash and crack the eggs into them. Cover and cook for about 5 minutes until egg whites are set.
  • Remove from heat and sprinkle with salt and pepper to taste.
  • Serve hot and enjoy the flavors!

Notes

Use leftover ingredients for quick meals. Store leftovers in airtight containers for up to 3 days, or freeze for up to 2 months. Great for breakfast, lunch, or dinner.
