  • 4 tablespoons vegan butter Adds moisture and buttery flavor.

Instructions
 

Preparation

  • Preheat the oven to 375°F (200°C).
  • In a large bowl, whisk together cornmeal, all-purpose flour, sugar, baking powder, and salt until evenly combined.
  • Pour in the plant-based milk, coconut milk, and 1 tablespoon of melted vegan butter to the dry mixture, stirring until just combined.
  • Allow the mixture to rest for 15 minutes.
  • Place a cast iron skillet in the oven for 5-10 minutes to heat it up.
  • Carefully remove the skillet and grease it with the remaining 3 tablespoons of melted vegan butter.
  • Pour the rested batter into the prepared skillet, spreading it evenly.

Baking

  • Bake in the preheated oven for 20-25 minutes, or until the top is golden and the edges are browned.
  • Serve immediately with additional vegan butter.

Notes

For best results, measure ingredients accurately and resist overmixing the batter. This dish can be customized by adding jalapeños, corn kernels, or using different plant-based milks.
