  • 2 cups frozen fire-roasted corn or 2 cobs fresh corn If using frozen corn, thaw before use; if using fresh, grill until charred.
  • 2 medium ripe mangos Should yield slightly to pressure for optimal sweetness.
  • 1 medium avocado Adds creaminess; mash slightly for a smoother texture if desired.
  • 1 medium red bell pepper Chopped, remove seeds before dicing.
  • 1/4 cup red onion Chopped for a sharp flavor.
  • 1 tablespoon lime juice Brightens and elevates flavors.
  • 1 teaspoon lime zest Enhances citrus notes.
  • 1/4 cup fresh cilantro Chopped for herbaceous flavor.
  • 1/2 teaspoon salt Adjust to taste.
  • 1 medium jalapeño pepper Optional for added heat, finely minced.

Instructions
 

Preparation

  • If using frozen corn, thaw it by microwaving for 30–60 seconds or warming in a dry skillet over medium heat for a few minutes. Pat dry if needed.
  • If using fresh corn, grill 2 cobs until slightly charred, then slice the kernels off the cob.
  • Peel and dice the mangos and avocado. Chop the red bell pepper, red onion, and cilantro. If using jalapeño, finely mince it.

Mixing

  • Add the corn, mango, avocado, bell pepper, onion, cilantro, and jalapeño (if using) to a large bowl.
  • Squeeze in the lime juice, add the zest, and season with salt. Gently toss until everything is well combined.

Serving

  • Taste and adjust seasoning with more salt or lime juice if needed.
  • Enjoy right away or chill for 10–15 minutes before serving. Great with chips, grilled chicken, fish, or tacos!

Notes

Letting the salsa chill for a short time allows the flavors to meld beautifully. Fresh produce is key for the best flavor.
