  • 2 medium Avocados Ripe for best texture.
  • 1/4 cup Cilantro Chopped.
  • 1/2 medium Red Onion Finely diced.
  • 1 large Lime Juiced.

Preparation

  • Rinse the sweet corn thoroughly if using fresh or canned. Thaw frozen corn under running water.
  • Dice the avocados into bite-sized pieces.
  • Chop the cilantro and finely dice the red onion, keeping them separate.
  • Squeeze the juice of one lime into a small bowl and set aside.

Cook/Assemble

  • In a large mixing bowl, combine the rinsed corn, diced avocado, chopped cilantro, and red onion.
  • Drizzle the lime juice over the mixture and sprinkle with salt and pepper.
  • Gently toss all ingredients together, being careful not to mash the avocado.
  • Let the salad sit for at least 10 minutes for the flavors to meld together before serving.

Serve

  • Give the salad a gentle stir, adjust seasoning if necessary, and transfer to a serving dish.
  • Garnish with extra cilantro for a pop of color.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. To maintain freshness, mix in extra lime juice.
