  • 1 cup Red onion, diced Ensure uniform pieces for even distribution.
  • 1/4 cup Cilantro, chopped Add roughly chopped, avoiding bruising.
  • 1 medium Jalapeño, minced Remove seeds for milder heat.
  • 1 Lime, juiced Freshly squeezed for best flavor.
  • 1 teaspoon Salt Adjust according to taste.
  • 1/2 teaspoon Pepper Adjust according to taste.

Preparation

  • Gather all your ingredients. Make sure they are fresh for the best flavor.
  • Dice the red onion into small, uniform pieces.
  • Mince the jalapeño, removing seeds for a milder heat if desired.
  • Chop the cilantro roughly, being careful not to bruise the leaves.
  • Juice the lime, setting it aside to add later.
  • Measure your corn and set aside. If using canned, rinse to remove excess sodium.

Cook/Assemble

  • In a medium mixing bowl, combine the corn, diced red onion, minced jalapeño, and chopped cilantro.
  • Pour in the freshly squeezed lime juice over the mixture.
  • Season with salt and pepper according to your tastes.
  • Mix everything gently with a spatula to combine. Be careful not to mash the corn.
  • Let the salsa sit for about 10 minutes before serving.

Serve

  • Transfer to a serving bowl and garnish with extra cilantro leaves if desired.
  • Serve immediately with tortilla chips or as a topping for proteins and tacos.
  • Store any leftovers in an airtight container in the fridge.

Notes

For best results, use fresh corn in season and let salsa rest before serving. Can customize with different herbs for added flavor.
