  • In a mixing bowl, add the cottage cheese and mash it slightly with a fork to create a smoother consistency.
  • Preheat your oven to 350°F (175°C) if you prefer to bake them slightly for a warm treat.
  • Prepare a baking sheet lined with parchment paper to prevent sticking.

Cooking/Assembling

  • In the bowl with the mashed cottage cheese, add almond flour, honey or maple syrup, vanilla extract, and salt.
  • Mix everything thoroughly until a dough forms; it should be slightly sticky but manageable.
  • Fold in the mini chocolate chips until evenly distributed throughout.
  • Mold the mixture into small balls, about one inch in diameter, and place them on the prepared baking sheet.
  • If baking, place the baking sheet in the oven for 10-12 minutes until slightly golden. If not, just chill in the fridge for about 15-20 minutes.

Serving

  • Once cooked or chilled, let them cool completely on the baking sheet.
