  • 4 ears corn, cooked Fresh corn is preferred for sweetness.
  • 1 pint grape tomatoes, quartered Adds sweetness and color.
  • 3 stalks scallions, chopped Provides mild onion flavor.
  • 8 oz smoked gouda cheese, diced Creamy and smoky.
  • 1/4 cup flat parsley, chopped For freshness.
  • 1/2 cup Italian dressing Zesty dressing to tie flavors together.
  • 1 tsp coarse Kosher salt To enhance flavor.
  • 1/2 tsp ground black pepper Adds subtle heat.

Instructions
 

Preparation

  • Cut the corn off the cob.
  • Add the quartered grape tomatoes and chopped scallions into the bowl with the corn.
  • Mix in the smoked gouda cheese pieces and drizzle Italian dressing on top.
  • Sprinkle in coarse Kosher salt and ground black pepper to taste.
  • Gently mix all the ingredients together until well combined.
  • Cover the bowl and refrigerate for at least one hour to allow flavors to meld.
  • When ready to enjoy, give the salad another toss to remix the ingredients.

Notes

For maximum flavor, use fresh corn in season. If fresh corn isn't available, frozen or canned corn can be used. Avoid adding the dressing until just before serving to prevent sogginess. Chill the salad to enhance flavors.
