Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).

  • Incorporate eggs one at a time into the wet mixture.
  • Add coconut milk, Greek yogurt, lime juice, and coconut extract, mixing until smooth.
  • Gradually add dry ingredients to the wet ingredients, mixing gently.
  • Fold in sweetened shredded coconut.

Baking

  • Transfer the batter into the prepared loaf pan.
  • Bake for approximately 50-60 minutes until a toothpick inserted comes out clean.
  • Allow the loaf to cool in the pan for about 10 minutes before transferring to a wire rack.
