Preparation

  • Preheat your oven to 350°F (175°C).
  • Prepare a 9-inch springform pan by greasing the sides and bottom.
  • In a mixing bowl, combine the graham cracker crumbs and melted unsalted butter, stirring until fully combined.
  • Press the mixture firmly into the bottom of the prepared pan.
  • Place the crust in the preheated oven and bake for 10 minutes, then remove and let cool.

Cooking

  • In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2 minutes.
  • Add the granulated sugar and vanilla extract; mix until well incorporated.
  • Incorporate the eggs, adding one at a time, mixing on low speed until just combined—avoid overmixing.
  • Stir in the sour cream, heavy cream, flour, and salt until smooth.
  • Pour the cheesecake filling onto the cooled crust.
  • Bake for 55-65 minutes, until the edges are set but the center is slightly jiggly.
  • Turn off the oven and let the cheesecake sit in the oven with the door slightly ajar for one hour.

Serving

  • Remove the cheesecake from the oven and allow it to cool completely at room temperature.
  • Chill in the refrigerator for at least 4 hours or overnight for best flavor.
  • Before serving, carefully remove the sides of the springform pan.
  • Slice and serve plain or with your favorite healthy toppings.
