Preparation

  • Preheat your oven to 325°F (163°C).
  • In a medium bowl, combine graham cracker crumbs, sugar, melted butter, and salt until fully mixed.
  • Press the mixture firmly into the bottom of a 9-inch springform pan, ensuring it’s even.
  • Place the crust in the freezer for about 10 minutes to set.

Assembly and Cooking

  • In a large bowl, beat the softened cream cheese until smooth and creamy.
  • Gradually add sugar and continue mixing until light and fluffy, about 2-3 minutes.
  • Add in vanilla extract and eggs one at a time, mixing well after each addition.
  • Mix in sour cream, heavy cream, and flour until fully incorporated.
  • Pour the cheesecake filling into the crust and smooth the top with a spatula.
  • Bake for about 60-70 minutes or until the edges are set but the center remains slightly wobbly.

Serving

  • Turn off the oven and crack open the oven door, letting the cheesecake cool gradually for about 1 hour.
  • Remove the cheesecake from the oven and let it cool completely at room temperature.
  • Once cooled, refrigerate for at least 4 hours, preferably overnight.
  • When ready to serve, carefully run a knife around the edge of the pan before unhinging.
  • Slice and serve chilled, maybe with your favorite fruit topping!

Notes

Use room temperature ingredients for smoother cheesecake and avoid overmixing the filling after adding eggs. Store leftovers in an airtight container for up to 5 days.
