Preparation

  • Begin by slicing the chicken breasts into cutlets to ensure even cooking.
  • Season flour with salt and black pepper on a plate.
  • Dredge each chicken cutlet in the seasoned flour, shaking off excess flour.
  • Prepare your cooking space by measuring out the garlic, lemon juice, chicken broth, and capers.

Cooking

  • Heat the olive oil and butter in a large skillet over medium heat (about 350°F or 175°C).
  • Once melted and shimmering, add the chicken cutlets in a single layer; cook for 4-5 minutes per side, until golden brown.
  • Remove the chicken from the skillet and keep warm.
  • Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  • Pour in the chicken broth and lemon juice, scraping up any brown bits from the pan.
  • Reduce heat and add the capers, letting the sauce simmer for 3-4 minutes.
  • Return the chicken to the skillet, spooning sauce over the top as it cooks for another 2 minutes.

Serving

  • Transfer the chicken to a serving platter.
  • Drizzle the sauce over the top and garnish with freshly chopped parsley.

Notes

Ensure your oil is hot before adding chicken for a crispy crust. Don't overcrowd the pan to achieve an even golden color. Store leftover sauce separately to keep the chicken from getting soggy.
