Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Spray a 9x13 pan with nonstick cooking spray.
  • Place the diced apples in the prepared pan.
  • In a small bowl, combine brown sugar, cornstarch, and cinnamon.
  • Stir the brown sugar mixture into the apples evenly.
  • Pour in the apple juice and stir to combine; set aside.

Baking

  • In a large mixing bowl, combine flour, granulated sugar, baking powder, and salt.
  • Cut in the cold butter until coarse crumbs form.
  • Pour in the buttermilk and stir until just combined.
  • Spoon the batter over the apple filling, covering it evenly.
  • Bake for 40–45 minutes until the filling is bubbly and the topping is golden brown.
  • Allow the cobbler to rest at room temperature for 15–20 minutes before serving.

Notes

For best results, use a mix of tart and sweet apples. Avoid overmixing the batter.
