Preparation

  • Pound the chicken to ensure even cooking.
  • Prepare the marinade by combining lime juice and zest, olive oil, chopped cilantro, minced garlic, and kosher salt in a container or freezer bag.
  • Marinate the chicken for at least one hour or up to overnight, turning halfway through.

Cooking

  • Preheat the grill or grill pan over medium to medium-high heat.
  • Grill the chicken for approximately 5 minutes on each side until cooked through, reaching an internal temperature of 165°F (74°C).
  • Remove the chicken, squeeze remaining lime juice over it, and garnish with fresh cilantro.
  • For air fryer option, cook at 380°F (193°C) for 5 minutes on each side.

Notes

For best flavor, use fresh ingredients. Marinate chicken the night before for enhanced taste. Add chili powder for a spicier kick. Let the grilled chicken rest before slicing for juiciness.
