Preparation

  • Soak the walnuts in water overnight or in hot water for 2 hours. Rinse and drain.
  • In a food processor, blend together walnuts, medjool dates, protein powder, and ground flax until smooth.
  • Mash in the bananas with a spatula and fold in the chocolate chips and remaining walnuts.
  • Pulse a few times or mix well with a spatula to your preferred banana chunk size.
  • Roll the mixture into balls and store in the freezer.

Notes

For additional flavor, consider adding a pinch of cinnamon or vanilla extract. Adjust sweetness by adding more or fewer dates. Roll the balls in shredded coconut or crushed nuts for extra texture.
