Main Ingredients

  • 8 oz Chow Mein Noodles The star of the dish!
  • 3 tbsp Soy Sauce Adds umami flavor.
  • 2 cloves Garlic, minced For flavor.
  • 1 tbsp Ginger, minced Adds a zesty kick.
  • 2 cups Mixed Vegetables (bell peppers, carrots, broccoli, snap peas) Use whatever’s in your fridge.
  • 2 tbsp Vegetable Oil For stir-frying.
  • to taste Salt & Pepper Enhances all flavors.

Instructions
 

Preparation

  • Boil water and cook chow mein noodles according to package instructions.
  • While noodles are cooking, chop your vegetables and mince the garlic and ginger.

Cooking

  • Heat vegetable oil in a large skillet over medium-high heat.
  • Add minced garlic and ginger, sauté for about 30 seconds until fragrant.
  • Toss in your mixed vegetables and stir-fry for 3-4 minutes until vibrant and tender.
  • Drain noodles and add them to the skillet with soy sauce. Mix well.

Serving

  • Season with salt and pepper to taste.
  • Serve hot directly from the skillet and enjoy.

Notes

Make a double batch for quick lunches. Store in airtight containers for up to 3 days, or freeze for a month. Reheat in the microwave or stove.
