Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Grease soufflé ramekins with butter and dust them with sugar.
  • Melt the dark chocolate and butter together in a double boiler, stirring until smooth.
  • Remove from heat and let the mixture cool slightly.
  • In a separate bowl, whisk egg whites until soft peaks form.
  • In another bowl, whisk together the egg yolks, sugar, vanilla extract, and salt until pale and thick.

Cooking

  • Fold the cooled chocolate mixture into the egg yolk mixture gently.
  • Carefully fold in the beaten egg whites to avoid deflating.
  • Pour the soufflé batter into the prepared ramekins, filling them about three-quarters full.
  • Bake for 12–15 minutes until puffed and slightly cracked on top.
  • Check for doneness; tops should look set but the center will be soft.

Serving

  • Remove soufflés from the oven and serve immediately.
  • Dust with powdered sugar or serve with fresh berries.

Notes

Ensure all your ingredients are at room temperature. Serve immediately to prevent collapsing. Experiment with various chocolate types for unique flavors.
