Preparation

  • Preheat the oven to 180°C (350°F) and prep a loaf pan with parchment paper.
  • In a large mixing bowl, combine pumpkin puree, Greek yogurt, vanilla extract, cooled melted butter, kosher salt, egg, granulated sugar, and brown sugar.
  • Sift in the cocoa powder and mix with a whisk until well combined.

Cooking

  • Add the flour and baking soda, mixing until almost combined.
  • Fold in the chocolate chips until just combined, ensuring no lumps of flour remain.
  • Pour the batter into the prepared loaf pan and sprinkle additional chocolate chips on top.
  • Bake for 50-60 minutes or until a toothpick inserted into the bread comes out clean.

Serving

  • Let the loaf cool for at least 20 minutes before slicing.
