Ingredients

Brownie Base

  • 1 cup Unsalted Butter Adds richness; can substitute with coconut oil.
  • 1 cup Sugar Use brown sugar for deeper flavor.
  • 2 large Eggs Provides structure; flaxseed can substitute for a vegan option.
  • 1 teaspoon Vanilla Extract Enhances chocolate flavor; can be skipped.
  • 1 cup Unsweetened Cocoa Powder Use Dutch cocoa for smoother flavor.
  • 1 cup All-Purpose Flour Can swap with almond flour for gluten-free.
  • 1/2 teaspoon Salt Balances sweetness.
  • 1 teaspoon Baking Powder Helps the brownies rise slightly.
  • 1 cup Semi-Sweet Chocolate Deepens chocolate flavor; dark chocolate can be richer.

Chocolate Mousse

  • 1 cup Heavy Cream Can substitute with coconut cream for dairy-free.
  • 1/2 cup Chocolate Chips Use semi-sweet for balanced sweetness.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line an 8-inch square baking pan with parchment paper.
  • Melt the unsalted butter and semi-sweet chocolate together in a microwave-safe bowl until smooth.

Cooking

  • Stir in sugar until combined, then add the eggs one at a time, mixing well after each addition.
  • Add vanilla extract and mix until smooth.
  • In a separate bowl, whisk together cocoa powder, flour, salt, and baking powder.
  • Gradually fold the dry ingredients into the wet ingredients, stirring until no dry flour appears.
  • Pour the brownie batter into the prepared pan and smooth it out.
  • Bake for 20-25 minutes, or until a toothpick comes out with a few moist crumbs.
  • Allow the brownies to cool completely in the pan.

Assembly

  • While brownies cool, beat the heavy cream until stiff peaks form.
  • Melt chocolate chips in the microwave and gently fold into the whipped cream until combined.
  • Spread the mousse evenly over the cooled brownies.
  • Chill in the fridge for at least an hour before cutting into squares.

Notes

Use quality chocolate for best flavor. Do not overmix. Allow chilling time for the mousse to set. Store leftovers in an airtight container for up to 5 days.
