  • 1/2 cup plant-based milk Creates moisture and helps incorporate all ingredients.
  • 1/4 cup coconut oil Adds tropical flavor and richness.
  • 1 cup all-purpose flour Forms the structure of the cake.
  • 1/4 cup cocoa powder Intensifies the chocolate flavor.
  • 1 tsp baking powder Helps the cake puff up during baking.
  • 1/2 tsp baking soda Works with vinegar for lift.
  • 1/4 tsp salt Enhances flavor.
  • 1/2 cup coconut sugar or brown sugar Sweetens the dessert and adds depth.
  • 1 tbsp apple cider vinegar Reacts with baking soda to help the cake rise.
  • 1/4 cup melted coconut oil Keeps the cake moist.
  • powdered sugar for dusting Adds a touch of sweetness on top.

Optional Serving

  • 2 scoops vegan vanilla ice cream An optional accompaniment.

Instructions
 

Preparation

  • Melt vegan dark chocolate chips with a little plant-based milk and coconut oil until smooth to prepare the ganache center.
  • In a bowl, combine the remaining plant milk with apple cider vinegar.
  • In another bowl, mix flour, cocoa powder, baking powder, baking soda, salt, and sugar, then combine with wet ingredients, whisking until smooth.

Assembly

  • Grease ramekins and pour half the batter into each.
  • Add a spoonful of the chocolate ganache into the center, then cover with more cake batter.

Baking

  • Preheat the oven to 425°F (220°C) and bake the filled ramekins for about 12-14 minutes until the edges are firm but the center is still jiggly.

Serving

  • Allow cakes to cool for a minute, then carefully invert onto plates and dust with powdered sugar before serving with vegan vanilla ice cream.

Notes

For a richer chocolate flavor, consider using high-quality dark chocolate. Do not overbake; cakes should have a slight jiggle in the center when done.
