Preparation

  • Boil enough water to cover the dried figs and dates in a bowl.
  • Once boiling, pour the water over the figs and dates and let them sit for about 10 minutes to soften.
  • Drain the water, but reserve a little if needed for blending.
  • While the fruits soak, toast the dry roasted almonds in a dry skillet over medium heat for 3-5 minutes, stirring frequently until golden and fragrant.

Cooking/Assembling

  • In a food processor, combine the soaked figs, dates, toasted almonds, cocoa powder, espresso, cinnamon, and salt.
  • Pulse for about 30 seconds, or until the mixture begins to clump together. Add a tablespoon of hot water if it’s too dry.
  • Taste the mixture; add maple syrup if you desire a touch more sweetness.
  • Continue blending until a sticky, thick mixture forms.

Serving

  • With clean hands, form the mixture into small balls, about 1 inch in diameter, yielding about 15-20 balls.
  • Place the formed balls on a baking sheet lined with parchment paper.
  • Refrigerate the balls for about 15 minutes to help them firm up before serving.

Notes
