  • 1 cup unshelled pistachios, lightly salted Provides a nutty crunch.
  • 1 cup pitted medjool dates Adds natural sweetness and a chewy texture.

Optional Enhancements

  • 1/2 cup protein powder Boosts protein content.
  • 1/4 cup ground flax seeds Adds fiber and omega-3 fatty acids.
  • 1 tbsp coconut oil Achieves a smooth chocolate coating.

Coating

  • 1 cup chocolate chips Melted for coating the energy balls.

Instructions
 

Preparation

  • In a food processor, blend pitted dates and pistachios until well combined.
  • If using, add protein powder and ground flax seeds to enhance nutrition.
  • If the mixture is too dry, slowly add 1 to 2 tablespoons of water or nut milk and blend until it becomes a gooey blob.
  • Scoop the mixture into your hands and roll it into bite-sized balls.
  • Place the rolled balls in the freezer for at least 30 minutes to firm up.

Coating

  • In a microwave-safe bowl, heat the chocolate chips for 30 to 45 seconds until melted, then add coconut oil for consistency.
  • Once melted and slightly cooled, dip each energy ball into the chocolate to coat evenly.
  • Sprinkle additional crushed pistachios on top of each chocolate-coated ball for extra crunch.
  • Place the dipped energy balls back in the freezer for another 20 minutes until the chocolate hardens.

Serving

Notes

Let the chocolate cool slightly before dipping to prevent melting the energy balls. Store in an airtight container in the refrigerator.
