Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
  • Grate the zucchini, then squeeze out excess moisture using a clean kitchen towel.
  • In a large bowl, combine the brown sugar, granulated sugar, and melted butter.

Cooking

  • Add the egg and vanilla extract to the sugar mixture, stirring until combined.
  • Sift in the flour, baking soda, salt, and cinnamon (if using), mixing until just blended.
  • Fold in the grated zucchini and chocolate chips gently, ensuring even distribution.
  • Spread the batter evenly in the prepared pan.
  • Bake for 25-30 minutes or until a toothpick comes out clean from the center.

Serving

  • Remove the bars from the oven and let them cool in the pan for 10 minutes.
  • Transfer to a wire rack to cool completely before slicing into squares.
  • Serve warm or at room temperature.

Notes

Store leftovers in an airtight container for up to 4 days. For extra richness, use melted coconut oil instead of butter.
