Wet Ingredients

  • 1 cup pumpkin puree Delivers moistness and rich flavor.
  • ½ cup vegetable oil Keeps the bread moist and tender.
  • 1 cup granulated sugar Sweetens the bread.
  • ½ cup light brown sugar Adds moisture and caramel flavor.
  • 3 large eggs Binds the ingredients together.
  • ¼ cup water Adjusts the batter consistency.
  • 1 tsp vanilla extract Adds warmth to the flavor.

Mix-ins

  • 1 cup semi-sweet chocolate chips Adds richness with melted pockets of chocolate.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Lightly coat two 9" x 5" loaf pans with cooking spray.
  • In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  • Incorporate pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, water, and vanilla into the dry mixture and stir until just combined.
  • Gently fold in semi-sweet chocolate chips.
  • Spoon the batter evenly into the prepared loaf pans.
  • Sprinkle coarse white sugar on top if desired.

Baking

  • Place the pans in the oven and bake for 50 minutes to 1 hour, or until a cake tester comes out clean.
  • Cool the loaves on a rack, then invert to serve.

Notes

Use room temperature ingredients for even mixing. Don’t overmix after adding wet ingredients to keep the bread tender. Letting the bread rest overnight enhances flavor.
