Ingredients
  

For the Chicken

  • 4 pieces Chicken breasts a lean protein source
  • 2 tablespoons Olive oil for marinating and enhancing flavor
  • 2 tablespoons Chipotle in adobo sauce adds smoky heat
  • 2 tablespoons Lime juice brightens the dish
  • 1 teaspoon Salt enhances all the flavors
  • 1 teaspoon Black pepper adds a touch of heat

For the Mango Salsa

  • 1 piece Mango sweet and juicy addition
  • 1/2 piece Red onion adds crunch and sharpness
  • 1/4 cup Cilantro fresh herb for garnish
  • to taste Salt for seasoning
  • to taste Lime juice for seasoning

Instructions
 

Preparation

  • In a bowl, mix olive oil, chipotle in adobo sauce, lime juice, salt, and black pepper.
  • Add the chicken breasts to the marinade ensuring they’re fully coated. Let marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  • While the chicken is marinating, prepare the mango salsa by dicing the mango and red onion, and chopping the cilantro. Combine in a bowl and season with salt and lime juice to taste.

Cooking

  • Preheat your grill to medium-high heat (about 400°F or 200°C).
  • Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until cooked through.
  • Check the internal temperature with a meat thermometer; it should read 165°F (75°C).

Serving

  • Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
  • Slice the chicken and serve topped with the fresh mango salsa and extra cilantro if desired.

Notes

Let the chicken marinate longer for deeper flavor. Use a grilling basket for smaller pieces. Serve with brown rice or quinoa for a complete meal.
