Preparation

  • Gather all your ingredients and equipment. You’ll need a mixing bowl, a whisk, and a baking dish.
  • In a large bowl, combine the chipotle peppers in adobo sauce (just the sauce), water, olive oil, minced garlic, ancho chili powder, vinegar, salt, cumin, oregano, and black pepper.
  • Whisk until smooth and well blended. This will be your marinade.
  • Add the boneless skinless chicken thighs to the marinade, ensuring they are fully coated.
  • Cover and refrigerate for at least 30 minutes (up to 24 hours for maximum flavor).

Cooking

  • Preheat your oven to 375°F (190°C).
  • Place the marinated chicken thighs in a single layer in a baking dish.
  • Bake in the oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the edges are slightly crispy.
  • Baste chicken with any remaining marinade halfway through to keep it moist.
