Preparation

  • Gather your ingredients: 2 large eggs, 6 ounces of chicken broth, 1 tablespoon of toasted sesame oil, and 1 thinly sliced green scallion.
  • Crack the eggs into a mixing bowl and beat them gently with a fork until well blended, careful not to create too many bubbles.
  • In a separate bowl or measuring cup, combine the chicken broth with the beaten eggs, stirring gently.
  • Add the toasted sesame oil and mix until just combined, avoiding excessive whisking.

Cook/Assemble

  • Set up a steamer pot or an insulated dish on the stove.
  • Pour the egg and broth mixture into a heatproof bowl or ramekin.
  • Cover the bowl with foil or a lid to prevent water from dripping into the eggs.
  • Bring water to a gentle simmer, then place the bowl in the steamer for around 10-12 minutes. The eggs should become slightly firm but still jiggle when gently shaken.

Serve

  • Once cooked, remove the bowl from the steamer using tongs (it will be hot!).
  • Carefully uncover the bowl, letting any steam escape before serving.
  • Sprinkle the sliced green scallion on top for color and flavor.
  • Serve warm, either as a side dish or light meal, paired with rice or noodles.

Notes

For a smoother texture, ensure no bubbles are incorporated while beating the eggs. Experiment with different flavored broths and ensure to cover the bowl tightly while steaming. Store leftovers in an airtight container for optimal freshness.
