Preparation

  • Gather all ingredients for the chimichurri sauce and the chicken.
  • Finely chop the parsley and cilantro, and mince the garlic.
  • In a bowl, combine the chopped herbs, minced garlic, olive oil, red wine vinegar, and red pepper flakes. Mix well.

Cooking

  • Preheat your grill or oven to medium-high heat (about 375°F/190°C).
  • Season the chicken thighs with salt and pepper, then brush a generous amount of chimichurri sauce over them.
  • For grilling, cook the chicken thighs for 6-7 minutes on each side or until they reach an internal temperature of 165°F (75°C).
  • If baking, place the chicken in a greased baking dish and bake for 25-30 minutes or until done.

Serving

  • Remove the chicken from the grill or oven and let it rest for a few minutes.
  • Drizzle additional chimichurri sauce on top before serving.
  • Serve warm with your favorite sides, like roasted veggies or a fresh salad.

Notes

Marinate the chicken in chimichurri for a few hours for an intense flavor. Store leftover chimichurri sauce in the fridge for up to a week. Consider using bone-in chicken thighs for extra moisture.
