Instructions
 

Preparation

  • Dice the onion and mince the garlic cloves.
  • Measure out the elbow macaroni and have all other ingredients ready to go.
  • Set a large pot of salted water on high heat, bringing it to a boil.
  • Gather your spices (chili powder and cumin) for easy access during cooking.

Cooking

  • Once the water is boiling, add the elbow macaroni and cook according to package instructions until al dente, about 8-10 minutes.
  • While pasta cooks, in a separate skillet, heat a tablespoon of oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  • Add the minced garlic and ground beef or turkey to the skillet. Cook until browned, breaking the meat up with a spoon, around 5-7 minutes.
  • Stir in the chili beans, diced tomatoes, chicken broth, chili powder, and cumin. Bring to a simmer and let cook for an additional 5 minutes.

Serving

  • Once the pasta is cooked, drain it and add it to the skillet with the chili mixture.
  • Stir well to combine the pasta with the meat sauce and let it heat through for another 2-3 minutes.
  • Sprinkle the shredded cheddar cheese over the top, allowing it to melt into the dish.
  • Remove from heat, and let sit for a couple of minutes before serving.

Notes

This dish reheats beautifully, making it perfect for meal prep. For best results, try using block cheese instead of shredded for a gooey texture.
