  • 1 can Chickpeas Drained and rinsed.

  • 8 pieces Tortillas Corn or flour, as per preference.

For the Mango Salsa

  • 1 Mango Diced; offers a refreshing contrast.
  • 1/4 cup Red Onion Diced; can be omitted for milder taste.
  • 1 piece Jalapeno Diced; skip if you prefer mild flavors.
  • 2 tablespoons Lime Juice Brightens the flavors.
  • 1/4 cup Cilantro Chopped for garnish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Chop the cauliflower into bite-sized pieces.
  • Drain and rinse the chickpeas, then pat them dry.
  • Dice the mango, onion, and jalapeno for your salsa.
  • Add lime juice and chopped cilantro to the diced ingredients for the salsa.

Cooking/Assembling

  • Spread the chopped cauliflower and chickpeas on a baking sheet.
  • Toss them with chili powder, cumin, salt, and pepper.
  • Roast in the oven for about 20-25 minutes, or until golden and tender.
  • Warm the tortillas in a skillet or microwave.

Serving

  • Assemble the tacos with roasted cauliflower and chickpeas.
  • Top generously with mango salsa.
  • Garnish with extra cilantro if desired.
