Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Wash and slice the zucchini into rounds.
  • Cut the chicken breasts into bite-sized pieces.
  • In a mixing bowl, combine olive oil, minced garlic, Italian seasoning, salt, and pepper.

Cooking

  • In a large baking dish, add the zucchini slices and coat them with half of the seasoning mix.
  • Add the chicken pieces on top of the zucchini and pour the remaining seasoning mixture over them.
  • Toss everything together to ensure even coating.
  • Bake in the preheated oven for approximately 25–30 minutes or until the chicken is cooked through and no longer pink in the center.

Serving

  • Remove from the oven and let it rest for a few minutes.
  • Garnish as desired.

Notes

For extra moisture, consider adding a splash of chicken broth while baking. Store leftovers in airtight containers in the refrigerator for up to 3 days. You can also freeze this dish for up to 3 months.
