Preparation

  • Rinse the whole chicken under cold water and pat it dry with paper towels.
  • Quarter the onions, and chop the carrots and celery.
  • Gather the peppercorns, bay leaves, and any fresh herbs you want to add.

Cooking

  • Place the chicken in a large stockpot.
  • Add the quartered onions, chopped carrots, and celery on top.
  • Pour in 10-12 cups of cold water, ensuring the chicken is fully submerged.
  • Add bay leaves and whole peppercorns.
  • Cover the pot with a lid and bring it to a boil over medium-high heat.
  • Once boiling, reduce the heat to low and let it simmer gently for 4-6 hours.

Serving

  • After simmering, use a slotted spoon to remove the chicken and vegetables from the pot.
  • Let the chicken cool, then reserve meat for use in soups or salads.
  • Strain the liquid through a fine mesh sieve into another pot or container to remove any solids.
  • Season the stock with salt to taste.
  • Let it cool completely before storing in airtight containers or using immediately.

Notes

For enhanced flavor, roast the chicken and vegetables in the oven before adding them to the pot. Try adding a splash of lemon juice at the end for brightness. Use a slow cooker for a no-fuss method.
