Preparation

  • Chop the carrots, potatoes, onions, and celery into bite-sized pieces.
  • Mince the garlic finely to release its aroma.
  • Cut the chicken into uniform pieces for even cooking.

Cooking

  • In a large pot, heat a drizzle of olive oil over medium heat.
  • Add the chopped onions and garlic, sautéing until fragrant and soft.
  • Stir in the chicken pieces, browning them lightly on all sides.
  • Once browned, add the carrots, potatoes, and celery.
  • Pour in the chicken broth and add thyme and bay leaves.
  • Bring to a boil, then reduce heat and let simmer covered for 30-40 minutes or until the chicken is tender.

Serving

  • Remove from heat and take out the bay leaves.
  • Taste and adjust seasoning if needed, adding salt and pepper to your preference.
  • Serve warm, garnished with fresh herbs if desired.

Notes

For a richer flavor, consider searing the chicken before adding other ingredients. Make use of leftover rotisserie chicken for a quick prep option. Store leftovers in airtight containers for up to 3-4 days.
