Preparation

  • Gather all your ingredients: cooked chicken, mayo, Greek yogurt, celery, green onions, Dijon mustard, and seasoning.
  • Place the cooked chicken in a mixing bowl; shred it into bite-sized pieces.
  • Finely chop the celery and green onions. Add these to the bowl with the chicken.
  • In a separate bowl, mix together the mayonnaise, Greek yogurt, and Dijon mustard until smooth.
  • Pour the mixture over the chicken and veggies, then season with salt and pepper. Stir thoroughly until well coated.

Cooking/Assembling

  • Preheat your oven to 350°F (175°C) if you prefer to warm the croissants.
  • Slice each croissant horizontally, creating a pocket for the filling.
  • Carefully spoon the chicken salad mixture into each croissant, filling it generously without overstuffing.
  • If desired, lightly place the sandwiches in the warming oven for about 5-7 minutes for a fresh-baked effect.
  • Remove from the oven and allow them to cool slightly before serving.
