Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Place chicken breasts between two sheets of plastic wrap. Use a meat mallet to pound them to about 1/2 inch thick.
  • In a bowl, mix ricotta cheese, cooked spinach, minced garlic, salt, and pepper until well combined.
  • Lay the chicken breasts flat on a clean surface, seasoned side up, and prepare for filling.

Cooking/Assembling

  • Spoon the ricotta spinach mixture evenly onto each chicken breast, leaving a small border around the edges.
  • Carefully roll each chicken breast away from you, securing the filling inside with toothpicks or twine.
  • Heat olive oil in a large oven-safe skillet over medium heat. Sear the roulades on all sides until golden brown (about 3-4 minutes per side).
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Serving

  • Remove the roulades from the oven and let them rest for 5 minutes.
  • Carefully remove the toothpicks or twine and slice the roulades into medallions for presentation.
  • Serve warm, garnished with fresh herbs if desired.

Notes

Store leftovers in airtight containers for up to 3 days. Freeze unbaked roulades for up to 3 months. Consider experimenting with different fillings or herbs for variety.
