Preparation

  • Gather all your ingredients to streamline the cooking process.
  • Chop the onion and mince the garlic, ensuring even cooking.
  • Slice the cooked chicken into bite-sized pieces for better incorporation into the sauce.
  • Prepare your herbs, having fresh parsley ready for garnish.

Cooking

  • In a large pot, boil water and cook the spaghetti according to package instructions until al dente, about 8-10 minutes.
  • While pasta cooks, heat olive oil in a large skillet over medium heat.
  • Add chopped onion, sautéing until translucent (about 3-4 minutes).
  • Stir in garlic, and cook for an additional minute until fragrant.
  • Pour in diced tomatoes, followed by olives, capers, and red pepper flakes. Simmer for 5-7 minutes.
  • Once pasta is cooked, drain and reserve a cup of pasta water.
  • Add the spaghetti to the skillet, tossing to coat in the sauce. Use reserved pasta water if needed to loosen the sauce.
  • Finally, stir in the sliced chicken and heat through about 2-3 minutes.

Serving

  • Remove from heat and plate the Chicken Pasta Puttanesca.
  • Garnish with chopped fresh parsley to add color and freshness.
  • Serve immediately while hot and enjoy the delicious flavors!
