Instructions
 

Preparation

  • Gather all your ingredients on a clean work surface.
  • Slice the bell pepper and onion, and if using, rinse the black beans and corn.
  • In a large mixing bowl, combine the shredded chicken, sliced bell pepper, sliced onion, and fajita seasoning. Stir until well mixed.

Cooking/Assembling

  • In a greased casserole dish, pour the chicken and veggie mixture evenly.
  • Add the black beans and corn, if using, and incorporate them gently.
  • Top with Monterey Jack and sharp cheddar cheese, evenly distributing across the dish.
  • Bake in the preheated oven for 25–30 minutes, or until the cheese is bubbling and golden brown.

Serving

  • Remove from oven and allow to cool for a few minutes.
  • Garnish with fresh cilantro for a burst of flavor.
