Dough Ingredients

  • 3 cups all-purpose flour The base for the empanada dough.
  • 1/2 cup butter Enriches the dough for a flakier texture.
  • 1 cup boiling water Helps to make a softer dough consistency.
  • 1 large egg For egg wash, gives a beautiful finish.

Instructions
 

Cooking the Chicken

  • Cook the chicken breasts in a pot with water and salt. Once boiling, let simmer for about 20 minutes until cooked through. Remove from pot, shred using a fork and knife.

Sautéing the Vegetables

  • In a large skillet over medium heat, add olive oil, sauté onion and garlic until translucent. Add bell pepper and leeks, cooking until tender.

Combining Filling Ingredients

  • Incorporate shredded chicken, sweet paprika, salt, and pepper. Cook for about 5 minutes.
  • Turn off the stove, add chopped hard-boiled eggs, and stir to combine.

Preparing the Dough

  • For the dough, mix boiling water with butter and salt until melted. Add flour and combine.
  • Knead on a clean surface for 15 minutes until soft.

Rolling Out the Dough

  • Roll out dough and cut into 4.5-inch circles. Preheat oven to 425°F.

Filling the Empanadas

  • Fill each empanada with chicken filling, crimping edges to seal.

Baking

  • Place empanadas on a greased baking sheet and brush with beaten egg.
  • Bake for 15-20 minutes until golden brown, checking after 10 minutes.

Notes

Empanadas can be frozen and baked right before serving. Serve with your favorite dipping sauces.
