Preparation

  • Dice the chicken into bite-sized pieces.
  • Chop the onion and bell pepper finely.
  • Peel and cube the potatoes.
  • Mince the garlic.

Cooking

  • In a large pot, sauté the onion, bell pepper, and garlic over medium heat until softened.
  • Add the diced chicken and cook until it's no longer pink.
  • Stir in the corn and potatoes, followed by the chicken broth.
  • Bring to a simmer and cook until the potatoes are tender, approximately 15-20 minutes.
  • Stir in the heavy cream and let it heat through, season to taste.

Serving

Notes
