  • Hard-Boil the Eggs: Start by placing your eggs in a pot and covering them with cold water. Bring the water to a boil, then cover and remove from heat. Let the eggs sit for about 10-12 minutes. After that, cool them in ice water, peel, and slice into quarters.
  • Cook the Chicken: Season the chicken breasts with salt and pepper. Grill or pan-fry them over medium heat for about 6-7 minutes on each side, or until they’re cooked through (internal temperature of 165°F). Let them cool slightly, then chop into bite-sized pieces.
  • Prep the Lettuce and Veggies: Wash the romaine lettuce and chop it into bite-sized pieces. Halve the grape or cherry tomatoes and set everything aside.

Cooking and Assembling

  • Cook the Bacon (if using): In a skillet, cook the bacon slices over medium heat until crispy. Remove them and let them drain on paper towels, then chop into pieces.
  • Combine Ingredients: In a large bowl or on a serving platter, create a bed of chopped romaine. Arrange the chicken, sliced eggs, tomatoes, avocado, bacon, parsley, and blue cheese (if using) on top.
