Instructions
 

Preparation

  • Gather all your ingredients, making sure everything is ready to go.
  • Rinse the rice until the water runs clear to remove excess starch.
  • Chop the chicken into strips, and dice the tomatoes, red onion, and avocado.
  • Thaw the corn if frozen and rinse the black beans in a colander.

Cooking

  • In a large skillet, heat the olive oil over medium heat.
  • Add the chicken strips and season with salt, chipotle chilis, and garlic powder. Cook until browned and cooked through, about 5-7 minutes.
  • Meanwhile, in a saucepan, combine the rinsed rice, water, and ΒΌ teaspoon salt. Bring to a boil, then reduce heat and cover until the rice is cooked (about 15 minutes).
  • Once the chicken is cooked, set it aside. Fluff the rice with a fork and stir in lime juice and zest.

Serving

  • In a bowl, layer the rice as the base.
