Instructions
 

Preparation

  • Boil the chicken by adding water, chicken, and halved onion to a large pot; bring to a boil.
  • Simmer until cooked through, about 30 minutes.
  • Remove the chicken and set it aside to cool, reserving 4 cups of the cooking liquid as stock.

Cooking

  • While the chicken cools, heat olive oil in a Dutch oven over medium-high heat.
  • Sauté chopped onions, carrots, and tomato until beginning to soften, about 4 to 5 minutes.
  • Stir in garlic and rice, cooking until fragrant and the rice begins to toast, about 3 minutes.
  • Incorporate the reserved cooking liquid and bring the mixture to a boil.
  • Reduce heat to low, cover, and simmer until rice is cooked through, about 20 minutes.
  • Shred the chicken and chop or pick the meat into pieces.
  • Once the rice is cooked, stir in the chicken pieces and parsley, then season with salt and pepper.
  • Distribute the chicken bog into bowls and serve.

Notes

For best results, use a quality chicken and avoid overcooking. It can be stored in the fridge for up to 3 days and frozen for up to 3 months. Reheat gently for the best texture.
