Preparation

  • Shred your cooked chicken and set it aside.
  • Mash the ripe avocado in a bowl until creamy; season well with salt and pepper.

Cooking/Assembly

  • Preheat a skillet or grill pan over medium heat.
  • Spread butter or brush olive oil on one side of each slice of bread.
  • On the unbuttered side, layer the shredded chicken, mashed avocado, and cheese.
  • Top with another slice of bread, butter side up.
