Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Grate the zucchini and squeeze to remove excess moisture.
  • In a large bowl, mix together the grated zucchini, flour, mozzarella, Parmesan, egg, garlic, oregano, salt, black pepper, and red pepper flakes until combined.

Cooking

  • Spread the mixture evenly onto the prepared baking sheet, shaping it into a rectangular form, about 1/2 inch thick.
  • Lightly spray or drizzle the top with oil.
  • Bake for 20-25 minutes, or until the edges are crisp and golden brown.

Serving

  • Remove from the oven, let cool for a few minutes, then cut into strips.
  • Serve warm with marinara sauce or enjoy plain.

Notes

For a gluten-free version, substitute all-purpose flour with almond flour. Store leftovers in an airtight container for up to 4 days.
