Ingredients
  

For the Potatoes

  • 4 large Russet Potatoes Peeled and diced
  • 2 tablespoons Oil For coating the potatoes
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper To taste
  • 1 teaspoon Garlic Powder For flavor
  • 1 teaspoon Onion Powder For flavor

For the Beef

  • 1 pound Ground Beef Cooked until browned
  • 1 packet Taco Seasoning Adjust spice according to preference
  • 1/2 cup Water For cooking the beef

For Topping

  • 2 cups Mexican Shredded Cheese Melted over the top
  • Optional Toppings Pico de gallo, guacamole, or sour cream

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Peel and small dice the russet potatoes into even cubes.
  • In a large mixing bowl, toss the diced potatoes with oil, salt, pepper, garlic powder, and onion powder.

Cooking

  • Spread the seasoned potatoes evenly on a baking sheet and bake for 20 minutes or until crispy and golden.
  • While the potatoes are baking, brown the ground beef in a skillet over medium heat.
  • Once browned, add the taco seasoning and water. Stir well and let simmer for 5 minutes.

Serving

  • Remove the crispy potatoes from the oven and pile the seasoned beef over the top.
  • Sprinkle shredded cheese generously over the beef.
  • Return to the oven for an additional 5-7 minutes or until the cheese is melted and bubbly.
  • Let cool for a minute before adding desired toppings.

Notes

For added texture, broil for a golden crust. You can use ground turkey or chicken for a lighter option. Keep toppings separate until ready to serve.
