  • 1/2 cup Sour cream to garnish and add tanginess
  • 1/4 cup Chopped green onions or cilantro for freshness

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Scrub and dice the russet potatoes into small cubes.
  • In a large bowl, toss the potato cubes with olive oil, garlic powder, onion powder, smoked paprika, chili powder, cumin, salt, and black pepper until evenly coated.
  • Set the seasoned potatoes aside to absorb the flavors.

Cooking/Assembly

  • In a large skillet over medium heat, brown the ground beef or turkey until no longer pink.
  • Drain any excess fat and stir in the taco seasoning and water. Simmer for 2-3 minutes until thickened.
  • Spread the seasoned potatoes in a single layer in a baking dish and pour the taco mixture on top.
  • Sprinkle the shredded cheese evenly over the taco layer.
  • Bake for 25-30 minutes, or until the potatoes are fork-tender and the cheese is bubbly and golden.

Serving

  • Remove the baking dish from the oven and let it cool for a few minutes.
  • Top generously with sour cream, chopped green onions or cilantro, and optional diced tomatoes or avocado slices for extra flavor.
  • Serve warm and enjoy this savory dish with your loved ones!

Notes

Try using a mix of cheddar and Monterey Jack for extra creaminess. For crispier potatoes, consider parboiling them for 5 minutes before seasoning.
