  • 1/2 cup Tzatziki sauce A refreshing dip that completes the dish.

Instructions
 

Preparation

  • Wash the veggies and cut the zucchini and bell peppers into small strips.
  • Slice the red onion thinly and chop the artichoke hearts into smaller pieces.
  • Gather all ingredients and preheat a skillet over medium heat.

Cook/Assemble

  • Drizzle olive oil in the skillet and add the zucchini, bell peppers, and red onion.
  • Sauté for about 5-7 minutes, until the vegetables soften.
  • Add the chopped artichokes, garlic powder, and oregano, stir well and cook for another 2 minutes.
  • Remove the veggie mixture from heat and set aside.
  • Place a tortilla in the skillet, sprinkle half with mozzarella and feta, and top with the veggie mixture.
  • Fold the tortilla and cook for about 3-4 minutes on each side until golden brown.

Serve

  • Carefully remove the quesadilla from the skillet and let it rest for a minute before slicing.
  • Serve warm with tzatziki and roasted red pepper dip.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for up to 1 month. Reheat in a preheated oven for 10-15 minutes.
