Instructions
 

Preparation

  • Boil a large pot of salted water over high heat.
  • Add the whole wheat pasta, cooking until just al dente, about 8–10 minutes.
  • Prepare broccoli by cutting into bite-sized florets.
  • Once the pasta is cooked, reserve about 1 cup of pasta water, then drain and set aside.

Cooking

  • In the same pot, melt the butter over medium heat.
  • Whisk in the flour, stirring frequently for about 2 minutes until lightly golden.
  • Gradually pour in the low-fat milk, whisking to create a smooth sauce.
  • Add the whole-grain mustard, salt, and freshly ground black pepper to taste.
  • Stir in the fontina cheese and grated parmesan until melted and creamy.
  • Add in the cooked chicken and broccoli, stirring until well combined.
  • Fold in the pasta, adding reserved pasta water as necessary for desired creaminess.

Serving

  • Scoop generous portions onto plates or into bowls.
  • Garnish with additional parmesan cheese for an extra cheesy touch.
  • Serve warm, optionally with a side salad for a complete meal.

Notes

Use freshly shredded cheese for a creamier sauce. Store leftovers in an airtight container for up to 3 days. This dish can be frozen for up to 2 months.
